Kuzumochi is a type of wagashi. Its a mochi cake that has a jelly-like texture and is made using kuzu starch.⁠

I made some soymilk Tokyo kuzumochi, which I found in a traditional tofu shop in Tokyo. Its obviously not super fresh, so its slightly harder than fresh kuzumochi - I guess that's the price we pay when you buy packeted sweets.😬 ⁠

This kuzumochi comes with kinako, the roasted soybean powder, and kuromitsu, the black sugar syrup. As usual, I had mine with matcha green tea - Such a perfect combo!😋💚⁠

Here's another meal I had when I was in Japan last November. ⁠

We got some fresh 'Toro yuba' - Toro is basically the fatty underbelly part of a tuna. The texture is incredibly soft, fluffy and creamy, it basically melts in your mouth!🫠🤩⁠

Regular yuba is more like a sheet but this one is in between tofu and yuba which is just heavenly. You can't find this gorgeous toro yuba in any regular shop - We got ours from a tofu truck that comes once a week, and its run by a traditional tofu shop!😁⁠

I put the toro yuba on top of some rice, and once again topped with some nori and wasabi, and then poured some soy sauce over it - It tasted heavenly!🫠💕⁠

I'm going back to Japan this April so I'm definitely gonna eat this again!😝⁠

The Afro Fries are definitely my favourite ❤️ I mean who doesn’t like deep-fried food? 😋 I had lots of tasty and nutritious dishes that I’m now inspired to try and make myself!

Surprise your friends at their next backyard bbq with these delicious steamed and grilled mushrooms! 

My friends are not vegan but were happy to try these different kinds of mushrooms from all over Japan 😋 For example the white maitake was from Niigata, Hanabira dake from Gunma, Tamogi dake from Yamata, I could go on! 

It’s impossible to find these mushrooms in Sydney, some I hadn’t even tasted before, I was soo happy! 

 You can enjoy these mushrooms both steamed in foil - so soft and juicy - or charred directly on the grill for a smoky taste 🤤 ✨ 

What better way to catch up with high school friends than with a healthy and tasty bbq? ❤️

Sydney is just too hot and sticky these days, even in March! I didn't want to make something hot or spend too much time on prep so here is my solution: ⁠

Smashed tofu with some leftover capcicum and alfalfa from my last class, with homemade Tsuyu (tempura dipping sauce) and salted kelp... which made it a bit too salty so I added some ground sesame - Perfect! Served on top of cold rice with shredded nori and chopped shallots ❄️ ⁠

The only thing that needed to be warmed was the miso soup, which I did on the stove for 3 minutes because I don't like microwaves. ⁠

This meal was super easy and nutritious, leftovers are such a gift on hot days like these 😌⁠

Today's meal is a bit weird 😗 I needed to get rid of some leftover zuchini, corn, and cauliflower so I decided to make a garlic oil based pasta BUT using organic black rice noodles from @spiralfoods. It may be unconventional but it makes this meal also gluten-free ✨⁠

I served it with some leftover carrot shiri shiri and mozuku su which are both popular Okinawan dishes. ⁠
