⁠I made a creamy veggie stew a few days ago by cooking veggies ( potato, onion, carrot ) in vegan chicken stock and soymilk from @originalbonsoy then thicken with Japanese medicinal starch Kuzu ( aka kuzu). I love using kuzu often during winter to avoid getting sick! 😅⁠

⁠I hate eating the same food, so I baked leftover stew with vegan cheese – now it looks and taste like gratin! 😋 ⁠

⁠It was a huge hit for my potato-loving Irish hubby! 🥔 ⁠

Wasyoku ( Japanese meal ) is always exciting! 😃⁠
⁠
Today’s main is grilled astuage ( deep fried tofu ), zucchini with enoki mushroom ankake sauce – always so fabulous to add fresh yuzu peel ✨ ⁠
⁠
Side dishes are bean sprout salad which is seasoned with fermented rice salt, kinpira gobo ( burdock and carrot stir fry in Japanese way ) miso soup with full of veggies, konnyaku, ginger, black sesame rice and cucumber and wakame sunomono ( Japanese style salad seasoned with rice vinegar, salt and sugar ) 🥢⁠
⁠
This meal is so gut-friendly – because I used fermented seasoning ( miso / shio koji – the fermented rice salt / rice vinegar ), konnyaku ( aka konjac ) which is called bloom for the stomach because of high dietary fiber contents, wakame which is Japanese seaweeds that contains both soluble and insoluble fibre ( same as konnyaku ) and dietary fibre-rich veggies! 😋⁠

The perfect Winter drink! It is called 'all cure tea' in macrobiotic and takes only one minute to make! 🤩 ⁠

'Ume-Sho Bancha” is a drink made by dissolving umeboshi, the Japanese salted plum and shoyu (soy sauce) in bancha (roasted green tea). You can also add grated ginger (in Japanese ginger is shoga) 🙌⁠

It is one of the traditional folk remedies used in Japan and its name originated from the 3 key ingredients described ✨⁠
⁠
Whenever you feel ill, try this ume-sho bancha. For a stronger effect,  try ume-sho kuzu with just simply adding kuzu into ume-sho bancha.  Also, it is more effective when taken when hungry or before meals 👏⁠

It is said to be effective for:⁠

Do you know what Isobe is? 🤔⁠

The word “isobe” in Japanese means “rocky seashore.” ⁠
In Japan, rocky seashores have tons of seaweed, so any dish that uses seaweed and/or nori is often called “Isobe something.” Yaki means to bake or grill. ✨⁠

I make the batter using gluten-free tempura flour from @casalare and Aonori, the seaweed! 🥢⁠

I pan-fried tofu with this isobe batter and put on top of the rice with thickened homemade vegan tempura dipping sauce ⁠

Side dishes are homemade daikon ume pickles, bean sprout and wakame ( seaweed ) with sesame sauce, kinpira gobo ( burdock ) and miso soup 🙌⁠

Today’s soba noodle is healthier than usual! 💚⁠

I used organic 100% buckwheat organic soba from @spiralfoods ( regular soba contains about 20-30% buckwheat and the rest is white flour ) which means it's more nutritious than regular soba and gluten-free! ✨ ⁠
⁠
For soba broth, I use MSG free vegan dashi, sea salt, soy sauce then thicken with kuzu ( aka kudzu ) , which is ancient Japanese medicinal food. I take kuzu more often during winter to avoid getting sick! 💪🏻⁠

Side dishes are Yudofu, the warm tofu, Bean Goma ae and homemade cucumber pickles 🙌⁠
