In Japan, Tempura Soba/Udon is one of the most popular dishes 🍜⁠

You might be thinking, we put crispy tempura in the noodle soup to make the tempura soggy 😅 – many people can’t believe why we destroy crispy tempura – but soggy tempura is soo nice for some reason! ⁠
⁠
I used 100% buckwheat soba from @spiralfoods and made tempura using gluten free tempura flour from @casalare ⁠
⁠
Noodle dishes can be not so nutritious because 95% of meal is carbohydrates but there are much less carbs in 100% buckwheat soba compared to regular soba (which only contains 20-30% buckwheat and the rest is white flour). I topped the soba full with vegetables, with Amazu (sweet vinegar), Konnyaku marinade and Kinpira Gobo to make the dish more nutritious and filling! 😊⁠

It's also a gluten free vegan soba meal which is almost impossible to find in Japan! 💪⁠

I found a plant based pulled pork that is made with mushroom and faba beans – that sounds healthy right? 🤔⁠

It's pretty easy to eat them in a wrap, but I always like to eat things in an 'Asian way'. ⁠

I tasted the pulled pork, and it was sweet with an interesting flavour. I have to admit, it did smell like cat food 🤣. I didn't want to throw it away so I thought for a while on the best way to eat it... it was difficult! 😅⁠

I decided to stir fry the plant-based pork with lots of veggies! The outcome? Not so fabulous... but when I added a bit of Sriracha on top, it was a bit better (thankfully 😊).⁠

Sometimes it's hard to find tasty vegan processed food and to eat them in a traditional Asian way is very tough! Does anyone else find it difficult sometimes to buy tasty vegan processed food? 💚⁠

1. Daikon asazuke (Pickled Daikon) -  I “massage”  daikon with ⁠
 fermented rice salt and konbu – served with yuzu peel ) ⁠

2. Grilled Atsuage (deep fried tofu) served with dashi based soy ⁠
 broth, grated daikon and yuzu peel⁠
⁠
3. Miso soup ⁠
⁠
4. Kelp, walnuts and woodear mushroom tsukudani ⁠
⁠
5. Choy sum ohitashi (cooked Choy sum soaked in soy and dashi ⁠
 based broth) ⁠

6. Arame ( Japanese seaweed ) no nimono ⁠
⁠
It does take more time to prepare a traditional Japanese meal but it is definitely healthy and yummy! ⁠😊⁠

Today, I made vegan noodles using tea-flavoured hard tofu and noodles from @evergreenfoods.au ! 😊⁠
⁠
If you haven't heard of Evergeen, they are an Australian company making fresh and healthy soy products (GMO free, of course!), noodle and dumpling sheet products! I sometimes use their products for my cooking classes! ✨⁠
⁠
Noodle dishes can be just carbs and not many nutrients, so I always add good protein where I can - hard tofu is one of the best sources of protein! Today's veggies consist of mushroom, onion and cabbage. I always added Kimchi on top for some additional fermented goodness (perfect for a healthy gut!). 💪⁠

Here is another meal that I cooked during our Central coast trip!⁠

I bought a vegan lentil pattie – served with rice for myself and potato for my hubby (If you've noticed, I keep cooking my rice and miso soup! )⁠
⁠
Whenever I travel, I bring my own rice, miso, dashi, nori, umeboshi, matcha and soy milk! 🥛⁠
⁠
Last year, when we went Cairns and stayed in A resort hotel, which I usually avoid but I was too busy thinking about accomodation – (then my hubby’s personal assistant booked it...) it was super hard! I don’t care if the hotel is so fabulous – I need my home cooked meal!⁠ 😅⁠

if I am away for more than 2 days. I can handle eating out for 10 days in Japan, but not anywhere else. ⁠

Who is like me? Or am I just being old and difficult…. ?! ⁠🤭⁠

PS: don’t worry, I didn’t cook every single meal but I might have cooked every single day – 12 days in a row. ⁠

But I did bring instant miso soup from @spiralfoods – so handy! So  not making miso soup eveyday! 😁 ⁠

A schnitzel isn’t Asian food but I eat it in an Asian way – with rice and miso soup. I do respect my potato loving hubby, so I also oven-baked a potato!⁠ 😅⁠

✨ Matcha Tea with Kinako Mochi and Anko ✨⁠

I used to like Japanese sweets like Kinako Mochi, but now I absolutely LOVE them! 😍⁠

Maybe it's because I'm getting older 😅, but the fact that most Japanese sweets are gluten free, vegan and rich in protein is so amazing 😮. They taste just as great, if not better than other sweets whilst being much healthier! ⁠

I had a light lunch so I was craving for something sweet. I cooked mochi on a dry frying pan, and then coated them with Kinako (roasted soy bean powder) and Anko (red bean paste). I used tinned organic Azuki beans from @spiralfoods for this and then added agave syrup. ⁠

An amazing snack that is perfect to combo with Matcha tea. 🍵⁠
