Who doesn’t love ice cream? This recipe offers a nutritious, refined sugar-free version of a classic treat—ice cream made with amazake, a traditional Japanese non-alcoholic drink.
Vegan Amazake Ice Cream
Amazake is naturally sweet, made from fermented rice, and packed with probiotics and prebiotics that promote gut health. It’s why it’s often called “Japanese yogurt”! Amazake is perfect for summer, offering a natural energy boost to combat fatigue. In fact, samurai used to drink amazake before battles, especially during the humid summer months when appetite tends to wane. I would call it a “Samurai’s Red Bull”! Amazake contains around 400 health-boosting components—including enzymes, minerals, and vitamins—all made easily digestible through fermentation. This process breaks down rice carbohydrates, giving you a quick recharge. It’s no wonder that amazake is also nicknamed “Natural IV Drip”!
Recipe
Ingredients
- 100g amazake
- 100 ml soymilk
- 1 TBSP oil
- 1/4 tsp lemon juice
- Pinch of salt
Method
- Mix all ingredients well in a blender and put in a container.
- Once it freezes, mix again
- Place all ingredients in a food processor and process until smooth.
- Pour into a container and freeze over night.
- Place the frozen mixture in a food processor then freeze again (or simply mix with a Wooden spoon).
