How to Make Vegan Rice Sandwich – Onigirazu

 

Onigirazu – Rice Sandwich

Do you know Onigirazu? Recently this rice sandwich has become really popular in Japan instead of making rice balls, the onigiri the Japanese most popular lunch item since we don’t need to get our hands dirty to make. The name is quite compelling, it comes from the word “onigiri” that means rice ball. However the “razu” means “without” so without pressing the rice ball! 

Its shape is like a sandwich, taste almost like sushi but without the hassle of rolling and sweet vinegar flavouring of the rice. You can simply fill them with your favourite foods!

Recipe

Serves 1 

Ingredients 

  • 1 nori sheet 
  • 140g (5oz) cooked rice 
  • tbsp or 30g (1oz)  tuna or plant based copycat tuna (see recipe
  • 10g (0.5oz) shredded carrot 
  • lettuceleaf
  • 2 tsp vegan mayonnaise or mayonnaise 

Method

  1. Start by placing down a square of cling film bigger than the size of the nori sheet. Then place the nori sheet on the cling film and sprinkle a pinch of salt.
  1. Spoon 70g(5oz) of warm cooked rice into the centre of the nori and spread lightly to make an even layer and in a squarish shape. Remember to leave some space around the edge of the nori, especially along the corners. 
  1. On top of the rice spread the tuna evenly.
  1. Cover the tuna with carrot, apply a squeeze of mayonnaise then place the lettuce leaf on top.
  1. Spoon the remaining rice on top of the lettuce but in the centre of the whole filling.
  1. Start from one corner and fold the nori sheet into the centre using the cling film to assist. Fold the opposite corner in, then the remaining 2 corners to completely seal the filling then wrap tightly with the cling film. The shape should now resemble a sandwich. Press firmly.
  1. Turnover and cut in half to reveal the arrangement of your rice sandwich.

Filling Suggestions:

Customise your onigirazu with any filling you like  

  1. Leftover stir-fry
  2. Grilled firm tofu + avocado + baby spinach
  3. Sautéed mushroom + sautéed kale
  4. Teriyaki tofu + lettuce + vegan mayonnaise
  5. Grilled zucchini +grilled eggplant + avocado + pesto
  6. Natto, Umeboshi and avocado for super healthy
