⏳ These yummy rice crackers are a traditional Japanese treat, going back 200 years to the Edo period! They're super popular souvenirs in Asakusa, known as "thunder cakes" as they're sold near the famous Kaminari-mon gate (thunder gate) at Senso-ji Temple ⛩️⁠

⚡️ Kaminari Okoshi means "thunder coming," but don't worry, they won't zap your tastebuds! 😂 They come in all sorts of delicious flavors like black sugar, peanuts, black sesame, and even matcha! With over 50 varieties to choose from, there's a perfect Kaminari Okoshi for everyone 🥳⁠

✨ This shop does demonstrations of making kaminari okoshi and you can taste freshly made still warm kaminari okoshi, not to mention purchase the freshly made kaminari okoshi right away.⁠

The day I visited, the Kaminari okoshi craftsman 👨‍🍳 was making Matcha flavoured Kaminari okoshi with Azuki, kinako with black syrup using brown rice. That is totally my kind of thing! You know, brown rice is healthier and I am a matcha lover 🥰⁠

Plus a healthy plant-based protein is added which is Azuki and Kinako, the roasted soybeans powder! Isn’t it amazing? I have never seen how kaminari okoshi is made, so it was so much fun to look at! 🤩⁠

❓Do you know Kintsuba? Kintsuba is one of the oldest traditional Japanese sweet ( Wagashi ) made by adding agar to cooked sweet red bean paste and baking it with a thin wheat and sticky rice flour skin ✨⁠

😋 Kintsuba originated in Osaka, and although square shapes are now mainstream, they were originally round. ⁠

👍 The kintsuba my sister bought for us is special. Not only high quality azuki beans  from Hokkaido is used but also they are round, the original kintsuba shape, and also using black soybeans from Tanba Sasayama which is known for its highest quality ( my parents place is close from Tanba Sasayama so we can get lots of products using black soybean from Tanba Sasayama !)😉⁠

I had lots of asparagus and mushrooms, wondering what to cook … my solution is to grill all of them and put on pasta💡 ⁠

For pasta sauce, I simply put tinned chickpeas, extra virgin olive oil, sea salt, water and yuzu juice. Chickpea flavour is quite over powering as I expected so I had to add extra almond milk to reduce the flavour of chick peas so yuzu flavour will shine✨😋 ⁠

I also added grilled onion to the sauce!⁠

🤔Result? Yes it worked🎉 ⁠
⁠
I sprinkled freeze-dried yuzu peel which add extra yuzu flavour😋 I used gluten free intstant noodle to substitute the pasta so it is gluten free! ⁠
