I was wondering what I can do with 6 bunches of broccolini from the $7.5 veggie box.  We just can’t eat much steamed broccolini and my hubby would eat only 1/3 bunch if I steamed it. So I came up with the solution!⁠

Put broccolini into his favourite dish which is pasta! 🙌 ⁠
⁠
I put 2 bunches of broccolini into the pasta and it was no problem for us to eat 1 bunch of broccolini per person. It was very enjoyable with strong garlic flavoured olive oil ( I had 4 garlics in my box before – so I am also busy using them too even though I peeled everything and stored it in a freezer ) ⁠

I also had leftover Kumura, the sweet potato soup ( yep, from the veggie box ) and coleslaw salad ✨ ⁠
⁠
I am trying to make our meal gluten-free as much as possible so I used organic brown rice noodles from @spiralfoods ⁠

So happy to eat lots of veggies! 🤩 ⁠

The Vegan Tacos were delicious! Filled with jerk cauliflower, sweet potato, roast onion and chickpea. Served on soft tortillas with pomegranate, mango relish, pineapple salsa, herb slaw and mild jalapeno yoghurt! 💚⁠

My favourite dish of the day was the Crumbed Eggplant with wild rice salsa, tomato relish, lime and yoghurt. It was my favourite dish of the day! 👌 ⁠

Katsu is getting well known these days, I think it is because people who go skiing in Japan eat katsu curry at the ski resort 👀⁠
 ⁠
Katsu is a Japanese dish consisting of a piece of meat, usually pork or chicken, covered in bread crumbs, fried, and then usually eaten with a Japanese BBQ sauce 😋⁠
 ⁠
The most popular is Tonkatsu, the pork katsu but today, I made daikon katsu! ⁠
⁠
I had leftover dashi simmered daikon from yesterday – used for daikon with ankake sauce so today, I deep-fried simmered daikon with bread crumbs and used the Otafuku Okonomiyaki Sauce from @otafuku_global The result? Soooo yum 👌⁠
 ⁠
The rest of the dishes are: ⁠
- Coleslaw ⁠
- Garlic konnyaku ⁠
- Kumura soup ⁠
- Homemade Chinese cabbage tsukemono ⁠
 ⁠
Yep, I used kumura from the $7.5 veggie box and used expensive?! - $6.9 half of a cabbage ( used to be less than half price… cabbage is so expensive now! ) 😧⁠

Anyway, another healthy Japanese meal full of veggies! Do you like katsu? 💚 ⁠

These days it is so easy to eat the rainbow because of my newfound hobby – buying a $7.5 veggie box! 🙏🏻 ⁠

From the box I used: ⁠

- Flat mushroom ⁠
- Heirloom Tomato ⁠
- Yellow squash ⁠
- Green capsicum ⁠
- Corn ⁠
- Cauliflower ⁠
- Onion ⁠
⁠
In this box, there are four corns… There were one to two corns in the box before, so I just put them on rice or salad but for four... I then decided to make corn soup which I haven’t made for a long time 😌⁠
⁠
Normally I use 1 onion, 1 potato and 3 to 4 corn to make corn soup but I used a quarter of cauliflower from the box and one potato – still an amazing sweet creamy corn soup. Sooo good. It is always good to use real corn rather than tinned corn, right? 💅🏻⁠

Today’s menu is: ⁠
⁠
- Dashi simmered Daikon with tofu, walnuts and flat mushroom ⁠
- Heirloom Tomato marinade – just soak tomato in expired sushi vinegar ⁠
- Corn soup using corn, onion, potato and cauliflower ⁠
- Squash and green capsicum Goma ae ( seasoned with vegan mentsuyu and sesame ) ⁠
 - Homemade Chinese cabbage pickles ⁠

My new hobby of using the $7.5 veggie box from my local supermarket is still going on 🥰⁠
 ⁠
Asparagus and tomato were looking pretty bad, so I needed to use them immediately!⁠
 ⁠
So I decided to make roast veggies, and homemade tomato sauce to make a meatball dish. 👌⁠
 ⁠
I roasted veggies – brussel sprout which is in season, sad-looking asparagus, mini carrots and yellow capsicum 💚⁠
 ⁠
For veggie sauce for the meatballs, I chopped onion, garlic, sad-looking tomato, yellow capsicum with vegan chicken stock. Then, once it cooked reasonably well, I put frozen vegan meatballs from IKEA in the oven 🙌⁠
 ⁠
While roasting, I made mashed potato ( I consistently have lots of potatoes from the veggie boxes ) by adding vegan butter and soymilk from @originalbonsoy ⁠
 ⁠
Even the asparagus looked bad, but once roasted, it was so yummy – the rest of the roast veggies are delicious! 😊⁠
 ⁠
The sauce was very nice.. who was the happiest? My Irish potato and brussel sprout-loving hubby! ☘️⁠

Making stew, curry and soup are one of the easiest ways to use lots of veggies! 👌⁠
⁠
It was my mission to use as many veggies as possible from my $7.5 veggies box for dinner! 🙌⁠
⁠
I used onion, carrot, corn, yellow capsicum, red radish, cauliflower, garlic, broccoli and lemon from the box! 😝⁠
⁠
I made a stew – starting with frying the garlic and onion slowly then added sweet potato ( from the previous box), cauliflower, carrot, corn and vegan chicken stock. Then, I added the broccoli and soymilk at the end! ⁠
⁠
What is the Japanese twist you ask? I thickened the stew with kuzu ( aka kudzu ) – Japanese ancient medicinal starch, which is alkalizing and has a great healing effect! 💚⁠

I also made a salad using yellow capsicum, red radish, Chinese cabbage seasoned with olive oil, salt and lemon. ⁠

It is such a great brain exercise to think about the menu using the veggie box! 👏🏻⁠
