Today, I would like to share what I normally make with the foods I stock up on. This is a crazy time for all of us and I’m sure your pantries are full of tinned beans and legumes! It is important to spend time at home but also stay strong both mentally and physically. It is definitely a challenging time for every one of us.
So, I thought I could give you a bit of cheap and quick meal guide because most of you are woking from home and may also need to be feeding your children and extra family members lunch! Or if you have sadly lost your job, you might want to keep an eye on the cost of food.
Here are some examples!
DAY 1 – Chunky veggie and bean soup! (click HERE for more detail)

To make my dish for day 2, I simply took the leftover soup and blended it to create a creamy sauce for pasta! It came out really tasty! Pretty much any vegetables can be blended together and will produce a thick consistency that tastes good. I then mixed in some extra fresh veggies -in this case, kale leaves to add a splash of “ green”.
I still had leftover sauce! This sauce by itself is a yummy thick soup, so I gave this to my friend to enjoy!
So here is it – you can make THREE meals!
A chunky soup turned into a pasta sauce & a creamy soup all made from a variety of tinned beans I stock up on in the pantry.
Even though it is sad that we have to be indoors most of the day, every single day, this extra time at home can go towards preparing healthy and nutritious meals for ourselves and loved ones.
