If you’ve joined one of my Japanese cooking classes, you may have noticed there’s one ingredient I keep coming back to.
Konnyaku (also known as konjac).
Whether we’re making gyoza, ramen, healthy gut recipes or comforting Japanese home cooking, you’ll almost always find konnyaku on the menu.
So why do I use it so often?
Because I genuinely believe it’s one of Japan’s most underrated superfoods.
What is konnyaku?
Konnyaku aka konjac is made from the root of the konjac plant (Amorphophallus konjac), which has been enjoyed in Japan for over 1,000 years.
Unlike many modern “superfoods”, konnyaku isn’t a recent health trend. It’s a traditional ingredient that has been part of everyday Japanese cooking for generations.
You’ll commonly find it as:
- Konnyaku blocks (grey or white)
- Shirataki (white noodle-shaped konnyaku)
- Itokonnyaku (grey noodle-shaped konnyaku)
Each has a slightly different appearance, but they’re all made from the same humble konjac root.

Konnyaku (konjac) is one of my most-used Japanese superfoods – perfect after a few indulgent meals to nourish my gut and support weight loss.
Why I love konnyaku
Growing up in Japan, nobody talked about konnyaku as a diet food.
It was simply something we ate.
Today, it’s still one of my favourite Japanese superfoods because it’s:
- Naturally rich in both soluble and insoluble fibre
- Very alkalising
- Naturally gluten free and dairy free
- Low in calories, yet satisfying thanks to glucomannan, a soluble fibre that absorbs water and expands in your stomach, helping you feel fuller for longer.
Because around 70% of our immune system is closely linked to the gut, I believe looking after your digestive health is one of the best investments you can make—especially during winter.
“I don’t like the texture and smell …”
This is probably the comment I hear most often.
Yes, konnyaku has a unique texture.
And yes, it sometimes has a distinctive smell when you first open the packet.
But here’s the good news…
Those two things are surprisingly easy to overcome.
After teaching Japanese cooking for more than 25 years, I’ve discovered plenty of ways to prepare konnyaku so it blends beautifully into everyday meals.
In fact, my husband isn’t a fan of konnyaku either—but he happily eats it when I cook it this way!

Konnyaku can be easily hidden in everyday dishes, making its unique texture much more enjoyable.
Konnyaku is much more than “Miracle Noodles”
A few years ago, konjac noodles became incredibly popular as a weight-loss food.
In the United States, they’re often sold as “Miracle Noodles.”
Although the trend has quietened down in Australia, Japanese people never stopped eating konnyaku.
Not because it’s fashionable.
Because it’s a traditional ingredient that’s affordable, versatile, satisfying and has been part of Japanese home cooking for centuries.
How I use konnyaku at home
One of the biggest misconceptions is that konnyaku can only be used in Japanese dishes.
I regularly add it to:
- Pasta sauces
- Gyoza filling
- Rice balls
- Stir-fried noodles
- Miso soup
- Hot pots
- Japanese stews
