Ramen has become one of the most popular Japanese dishes around the world, and Sydney is no exception.
When I first arrived in Sydney in 1998, there were only two ramen shops in the city. At that time, many people had never even heard of ramen. Today, ramen restaurants can be found almost everywhere, and ramen has become a favourite comfort food for many.
Japanese food is often associated with balance, simplicity and health. However, ramen is quite different from the everyday meals many Japanese people eat at home.
Why Restaurant Ramen Is Not Always a Healthy Choice
While ramen is delicious and satisfying, many restaurant versions are not as healthy as people might assume.
Many ramen bowls are high in sodium, fat and refined carbohydrates, while offering very little dietary fibre or vegetables — quite different from the balanced image many people associate with Japanese food. Research also shows that higher dietary fibre intake is associated with lower cardiovascular risk **
Another thing many people may not realise is that traditional ramen broth takes hours to prepare. In many ramen restaurants, bones are boiled for long periods to create rich, flavourful broths. Even after hours of cooking, some restaurants still add MSG to enhance the savoury flavour.
So while ramen may seem like a quick and casual meal, making traditional ramen from scratch is not always practical for home cooks.

A Healthier and Easier Way to Make Ramen at Home
That is why I teach a different approach to ramen — one that is simpler, more balanced, and still full of flavour.
Instead of relying on long-cooked broths, my recipes focus on practical techniques, nourishing ingredients, and clean, satisfying flavours that work in a real home kitchen.
Ramen does not have to be complicated to be delicious.
