What’s Healthiest Japanese noodle ?

In Japanese noodle is a big part of our diet.

Popular noodle in Japan are

  • Udon
  • Soba
  • Ramen
  • Somen
  • Yakisoba

so which one you think the healthiest noodle ?

The answer is ” SOBA” , the buckwheat noodle.

100% buckwheat soba noodle soup – colour of soba is darker! 

 

Why?

Udon, ramen, yakisoba and somen noodle are all made from white flour and can be made with bleached refined flour which doesn’t have many nutrients and high GI – a recipe for overweight and disease!

On the other hand…. Buckwheat is a powerhouse of nutrients and has many health benefits. For example

Buckwheats are helpful in

  • Weight loss
  • Healthy heart
  • Preventing diseases ( especially diabetes / cancer/ gallstones )
  • Glowing skin
  • Healthy hair
  • Preventing ageing

You will be amazed how nutritious soba is… rich in protein, fibre, energy-boosting B vitamins, plus minerals including manganese, magnesium, zinc, iron and folate oh, not to mention antioxidant

 

HOWEVER!!!!!!! 

We can’t just think Soba is super healthy!  WHY???

Because…

Most soba noodle in Japan and here is a mixture of wheat flour and buckwheat flour. As a matter of fact you can claim as ” soba” even the noodle contain  70% wheat and 30% buckwheat in Japan …but actually I found soba 80% wheat and 20% buckwheat in Sydney…. NOOOOOOO… 

It is still better than 100% wheat flour but still, it is quite low.

but don’t worry, there are better options available 🙂

I use only

  • 100% buckwheat soba  ( gluten free)
  • Quinoa soba that is made from buckwheat, Quinoa and WHOLE meal flour

in my Japanese cooking classes in Sydney.

Next time you buy the soba noodle, please check the label carefully for better quality soba for your health and beauty!
